I recently discovered that I’m gluten intolerant after many months of uncomfortable stomach problems. I had terrible stomach cramps, and I couldn’t figure out what was causing them. First, I tried cutting out dairy, thinking that was the problem. When cutting out dairy didn’t work, someone suggested that I should try cutting out gluten. I decided to start this on a Monday and try it out for two weeks. By Tuesday, I felt immensely better and was having no stomach issues. After two weeks of no gluten, I was ready to introduce it back into my diet to see what ensued. A tantalizing blueberry muffin from Starbucks was what I decided to consume, and for about three hours I thought I was cured, until the stomach cramps returned and I swore off gluten for good.
I’ll be posting at least one gluten-free dish every week, and hopefully soon I’ll have complied a full database for you to pursue and discover that being gluten intolerant is not so bad at all.
